No-Bake Mediterranean Pizza
Before kids and real jobs, we used to frequent this little down-town Greek restaurant. That’s where I wanted to go on my birthday, but also order take-out from when I was too lazy to cook (most days).
These days we don’t eat out very much and even if we did, that place isn’t very vegan friendly. But, every time I make this tzatziki sauce or naan my husband always says it takes him back.

This pizza combines the best of all things: Naan, tzatziki sauce, loads of olives (my favourite!), and the best part is, you don’t even have to bake it!
Ingredients
For the Mediterranean salsa:
- 1 cup diced tomatoes
- 1/2 cup pitted Kalamata olives, halved
- 1/2 cup artichoke hearts, roughly chopped
- 1/4 cup onion, very finely diced
- 1/4 cup red bell pepper, finely diced
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 2 tablespoons good olive oil
- 1 tablespoon freshly squeezed lemon juice
- 1/2 teaspoon salt
- fresh cracked pepper
For the tzatziki sauce:
- 1 cup vegan sour cream (I like Tofutti)
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon good olive oil
- 1 cup shredded cucumber (make sure to seed your cucumber and drain or squeeze out excess liquid. I just squeeze with clean hands).
- 2 cloves garlic, very finely minced
- pinch of cumin powder
- 1/2 teaspoon sea salt
- fresh cracked pepper
For the pizza:
- 4 pieces of your favourite naan bread (our recipe here)
- Fresh parsley for garnish
Directions
For the salsa:
- Combine all ingredients into a medium bowl. Toss lightly. Cover and set aside on your countertop.
For the tzatziki:
- In a medium bowl, add all ingredients. Stir until thoroughly combined. Cover and set in the refrigerator.
To assemble your pizza:
- Lay out your naan bread. Spread tzatziki sauce over the bread.
- Add a few scoops of your salsa.
- Sprinkle with fresh parsley.
- Enjoy!
