Even if you’re not vegan or vegetarian, there are many valid reasons to give up tuna. Not only is tuna absolutely loaded with mercury, the way that we fish for tuna is a sea-life nightmare. It is believed that we have killed over 6 million… 6 MILLION dolphins in a little over 50 years. This has gotten better with “dolphin safe” tuna, but we are still over fishing and emptying our oceans at an alarming rate. Specific species of tuna are on the verge of extinction.

Here’s the good news: You don’t have to give up delicious tuna-like sandwiches. Mashed chickpeas have a “fishy” quality to them, and when combined with mayo and a little onion, you’d swear it was the real thing.

This recipe is basically a jazzed up chickpea salad sandwich, because just mayo and onion is a little unimaginative, doncha think?

Ingredients

Makes about 4 sandwiches*

  • 1 15oz can organic chickpeas, rinsed and mashed
  • 1 cup cabbage, finely shredded
  • 1/2 avocado, cut into small cubes
  • 1 tablespoon chives, chopped
  • 1 tablespoon red onion, finely diced
  • 1 clove garlic, minced
  • 1 tablespoon capers, chopped
  • 1/3 cup vegan mayo
  • 1 tablespoon olive oil
  • 1 tablespoon grainy mustard
  • 1 teaspoon freshly squeezed lemon juice
  • 1/2 teaspoon dried basil
  • 1 teaspoon sea salt
  • fresh cracked pepper

Directions

  1. Add mashed chickpeas, cabbage, avocado, chives, onion, garlic, and capers into a medium bowl.
  2.  In a small bowl, whisk together the mayo, olive oil, mustard, lemon juice, basil, salt, and pepper.
  3.  Fold all ingredients together.
  4.  Serve on sandwiches with lettuce, sprouts, tomato, cucumber, vegan cheese, etc.
  5.  Enjoy!
