Happy Mama Tahini Cookies
These chewy oatmeal cookies make me a happy mama. I love tahini. I pretty much put it in everything. And I love oatmeal cookies. So I thought, why not make tahini-oat cookies? The results are a chewy oatmeal cookie with a hint of tahini, a winning combo in my book!
Ingredients
- 1/2 cup tahini
- 1/2 cup oats
- 1/3 cup coconut sugar (or whatever sugar your family uses: cane, date, etc.)
- 1 teaspoon ground flaxseed
- 3 tablespoons applesauce
- 3/4 teaspoon baking soda
- 1/2 teaspoon cinnamon
- big pinch of salt
Directions
- Preheat the oven to 350 F
- In a mixing bowl, combine all of the ingredients. Stir until the mixture forms a dough.
- With clean hands, roll the dough into 12 walnut sized balls. Place the balls at least 2 inches apart on a cookie sheet.
- Bake for 8-10 minutes. Remove the cookies from the oven when they are just beginning to firm up, but still appear soft and doughy.
- Let them sit on the cookie sheet at room temperature for several minutes before transferring to a plate with a spatula.
- Enjoy with a glass of almond milk!
