Happy Mama Tahini Cookies

These chewy oatmeal cookies make me a happy mama. I love tahini. I pretty much put it in everything. And I love oatmeal cookies. So I thought, why not make tahini-oat cookies? The results are a chewy oatmeal cookie with a hint of tahini, a winning combo in my book!

Ingredients

  • 1/2 cup tahini
  • 1/2 cup oats
  • 1/3 cup coconut sugar (or whatever sugar your family uses: cane, date, etc.)
  • 1 teaspoon ground flaxseed
  • 3 tablespoons applesauce
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • big pinch of salt

Directions

  1. Preheat the oven to 350 F
  2. In a mixing bowl, combine all of the ingredients. Stir until the mixture forms a dough.
  3. With clean hands, roll the dough into 12 walnut sized balls. Place the balls at least 2 inches apart on a cookie sheet.
  4. Bake for 8-10 minutes. Remove the cookies from the oven when they are just beginning to firm up, but still appear soft and doughy.
  5. Let them sit on the cookie sheet at room temperature for several minutes before transferring to a plate with a spatula.
  6. Enjoy with a glass of almond milk!
