Broccoli & Brussels Salad w/ Lemon Poppy Seed Dressing
Well, the snow is kinnnndddaaa melting here, in New Brunswick, Canada. I could use a break from all the winter casseroles and Easter candy.
I love poppy seed dressing and I love broccoli salad. Turns out, they are a perfect pair!
Ingredients
For the dressing:
- 1/2 cup vegan mayo
- 3 tablespoons almond milk
- 1 tablespoon + 2 teaspoons freshly squeezed lemon juice
- 2 tablespoons agave
- 1/4 teaspoon salt
- 2 teaspoons poppy seeds
For the salad:
- 3 cups broccoli florets
- 2 cups brussels sprouts, halved or quartered depending on size
- 1 1/2 cups red grapes, halved
- 1 small carrot, julienned
- 2 tablespoons red onion, finely diced
- 1 heaping tablespoon hemp seeds
Directions
For the dressing:
- Add all ingredients into a mason jar. Screw the lid on tightly. Shake until all ingredients are combined. Set aside.
For the salad:
- Add all ingredients into a large bowl. Pour dressing over the vegetables. Toss until everything is coated. For maximum flavour, do this the night before serving. Cover it and store in the refrigerator.
