Artichoke Ceviche Avocados
Some of my ideas for recipes come from non-vegan dishes. I thought up this recipe after reading a menu that mentioned crab ceviche stuffed avocados. I loved the idea of an avocado stuffed with citrusy flavor, and I think artichoke hearts have a nice flaky texture similar to crab. The result is this cruelty free version. I guarantee these won’t make anyone crabby!
Ingredients
- 1 14oz can artichoke hearts, drained and roughly chopped
- 1 clove garlic, minced
- 1 scallion, diced finely
- 1 medium tomato, diced
- 1 teaspoon lime zest
- juice from 1 large lime
- 1 tablespoon fresh cilantro, chopped
- large pinch of coarse sea salt
- 2 ripe avocados
Directions
- In a bowl, combine all of the ingredients except for the avocado. Let the mixture marinate for at least 15 minutes.
- Cut the avocados in half, and remove the pit. Stuff the avocado halves with the artichoke mixture.
- Serve immediately… don’t let those avocados turn brown!
