Artichoke Ceviche Avocados

Some of my ideas for recipes come from non-vegan dishes. I thought up this recipe after reading a menu that mentioned crab ceviche stuffed avocados. I loved the idea of an avocado stuffed with citrusy flavor, and I think artichoke hearts have a nice flaky texture similar to crab. The result is this cruelty free version. I guarantee these won’t make anyone crabby!

Ingredients

 

  • 1 14oz can artichoke hearts, drained and roughly chopped
  • 1 clove garlic, minced
  • 1 scallion, diced finely
  • 1 medium tomato, diced
  • 1 teaspoon lime zest
  • juice from 1 large lime
  • 1 tablespoon fresh cilantro, chopped
  • large pinch of coarse sea salt
  • 2 ripe avocados

Directions

  1. In a bowl, combine all of the ingredients except for the avocado. Let the mixture marinate for at least 15 minutes.
  2. Cut the avocados in half, and remove the pit. Stuff the avocado halves with the artichoke mixture.
  3. Serve immediately… don’t let those avocados turn brown!
