Drunk Jerk Beans

No one likes a drunk jerk, but maybe if you tried these pinto beans, you might make an exception. Dark rum and Caribbean Jerk spices are infused into these beans as they slow cook on the stove or slow cooker. This recipe is incredibly simple and, if you sauté the onions and garlic ahead of time, can easily be thrown in the slow cooker for a meal even a drunk jerk could make. If you’re using soaked, uncooked beans in the slow cooker, just increase your cooking time to 6-8 hours.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups cooked pinto beans (or 2 15 oz cans)
  • 1/2 cup vegetable broth
  • 1/3 cup dark rum (or, for a virgin version, use pineapple juice)
  • ¼ cup brown sugar or coconut sugar
  • 1 teaspoon dried thyme
  • 2 teaspoons allspice
  • 2 teaspoons black pepper
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • Lime, avocado, and cilantro, for serving

Directions

  1. In a large heavy-bottomed pot over medium heat, add the olive oil and sauté the onions for 3-5 minutes, until translucent. Add the garlic and sauté until fragrant.
  2. Add the beans, broth, rum, sugar, and spices and stir to incorporate. Bring the beans to a simmer, and then reduce the heat. Let the beans cook on low heat for at least 30 minutes to an hour to intensify the flavors.
  3. Serve warm with avocado, cilantro, and a squeeze of lime.
